This comforting lamb curry uses fresh halal shoulder cut from our vendors — tender, flavourful, and ideal for slow-simmered dishes.
Ingredients
- 800 g halal lamb shoulder, cubed (order lamb shoulder cut)
- 2 onions, finely sliced
- 4 cloves garlic, minced
- 1 tbsp ginger paste
- 2 tbsp tomato passata
- 1 tsp ground cumin, coriander, and turmeric
- 1 Shan Tandoori Masala sachet (optional, for extra depth)
- Salt, pepper, and fresh coriander to serve
Method
- Brown the lamb in a heavy pot over medium-high heat. Set aside.
- Softén onions in the same pot until golden, then add garlic and ginger.
- Stir in spices and tomato passata. Cook for 2 minutes.
- Return the lamb, add enough water to barely cover, and simmer covered for 1–1½ hours until tender.
- Adjust seasoning and serve with rice or warm naan.
